Peppered cheeselets are not only prepared from local recipes, but are the produce of the only Dingli shepard that roams the surrounding countryside. Maltese Olives, one of the oldest species of domesticated trees are typical of the Dingli countryside.

Historical, cultural and local aspects have been considered in the selection of jams, marmalades and preserves. The Carob syrup is a reminder of the carob tree, one of the oldest tree species found in the Mediterranean. Quince preserve, made from wild quince fruit is not only flavourful but also has medicinal properties. The quince fruit is also high in pectin, which acts as a natural setting agent to the preserve.

Olive Oil

The Extra Virgin Olive Oil sold at THE CLIFFS is a tribute to the oldest olive tree that is found at the fields owned by the Muscat family down the cliffs. The olives are hand-picked from family-run and local farmers’ groves from Dingli and are pressed exclusively using mechanical means.
